Now if you're trying to eat healthy but craving a treat, you can have your cake and eat it too!
I loved this so much I had to share the recipe as soon as I ate it!
Ingredients:
1 1/2 cups ricotta cheese, part skim
2 Tbsp honey
3/4 cup greek yogurt
2 eggs
4 Tbsp oat flour (you can use any kind of flour - almond flour, whole wheat)
cinnamon
vanilla extract
lemon zest from one lemon
juice of one lemon
1 1/2 cups mixed raspberries, blueberries and blackberries (or any combo you prefer or have on hand)
Directions:
If you want to use oat flour pulse some oats in your processor or blender before adding your other ingredients to make oat flour. You will need a bit more than the amount above of oats to make oat flour.
Preheat the oven to 350. I made this in my ninja but you can use your food processor or blender too. The ninja made it really smooth so it came out delicious! Add all the ingredients above (I like a lot of cinnamon and I use homemade vanilla extract). Pulse until it becomes a smooth liquid. Pour into prepared ramekins or mini loaf pans. This made three mini loaves for me. I added about add a cup of berries into each pan and pushed them down. My cakes took about 40 minutes to cook but you might want to start checking them at 30 minutes.
For 21 day fixers each cake is 1 red, ~ 1/2 purple, 1 teaspoon
