Today is Sunday! So I spent a couple hours this morning meal prepping for the week!
I made:
- chocolate protein muffins
- veggie egg muffins
- quinoa yogurt parfaits
- grilled chicken
- hard boiled eggs
- fresh whole wheat bread
- quinoa pizza bowls
- cooked carrots, green beans and sweet potatoes.
- I chopped cucumbers and strawberries and made individual packs of grapes.
- I sliced onions and peppers and marinated steak for fajitas tomorrow.
- I chopped peppers and onions for sweet and sour chicken tonight.
Also on the menu this week are turkey lettuce wraps, veggie lasagna, real food shamrock shakes, and homemade pizza!
Grilled chicken ready for salads or other lunches
Cooked carrots and green beans in individual portions
sweet potatoes cubed and cooked with a little olive oil, S&P - ready for a side to any meal
two giant cucumbers sliced ready for snacking or salads
grab and go packs of grapes (1 purple each!)

marinated meat for fajitas tomorrow night
Onions and peppers prepped for dinner tonight and tomorrow

I made simple ones with just quinoa, fresh mozzarella and tomato sauce
(We will eat a side of veggies with them instead)
