I finally tried cauliflower rice and I am much more impressed than I was with cauliflower pizza crust (that was way too much work!)
Both my kids even ate it after initially saying no thank you and reluctantly trying the first bite. Then my eldest had a second helping!
I washed and cut up a head of cauliflower. I had to pulse it in two batches in my food processor - just enough to give it a rice consistency and not enough to puree it.
It made about four cups or so.

Ingredients:
1 1/2 Tbsp olive oil
~ 4 cups of cauliflower rice, from a medium head of cauliflower
1 cup carrots, chopped
1 cup broccoli, chopped
1/2 cup onion, chopped
3 cloves garlic, minced
1 cup bell pepper, chopped
3 eggs
~1/4 cup Braggs Aminos or soy sauce
salt and pepper
Directions:
Heat a skillet and warm the olive oil. Add the carrots, brocolli, onion and peppers and cook for a few minutes to soften. Push the veggies over to make room in the edge of the skillet to cook the eggs. Crack the three eggs and once cook, incorporate into the veggies. Add garlic, soy sauce/Braggs Aminos, salt and pepper. Add the cauliflower rice and stir to combine everything. Serve with your favorite protein.
Makes 4 two-cup servings. For 21 day fixers one serving is 2 green and 1 tsp
