Black Bean Burgers


Black Bean Burgers

Black Bean Burgers

The amounts are approximates so don't feel you need to measure or stick to this exactly!

2 cups cooked black beans (if using canned, rinse first)
1/2 cup onion, diced
1/4 cup carrots, diced
1/4 cup bell peppers, diced
1/2 cup old fashioned oats (or breadcrumbs)
2 eggs
1 Tablespoon homemade taco seasoning (I make mine according to Real Fit Real Food Mom's taco seasoning recipe)
extra garlic powder and cumin if desired

Mash almost all the beans in a bowl.  Add 1/4 cup whole beans for texture.  Add spices and then add onion, carrot, peppers, bread crumbs (or oats- I used oats) and eggs.  Mix well (you can use your hands). Form into ten patties and put in the fridge until you are ready to grill them. I made them in the morning and left them in the refrigerator until dinner time.

For you 21 day fixers, without cheese 2 patties = 1 1/2 yellows (or .8 yellow in one patty)


I cooked mine on a flat griddle pan or you can put a piece of tin foil over a grill or grill pan (so pieces don't fall off the burger.  Refrigerating helps with this too.)


Add a slice of cheddar cheese (I would have added avocado too if I had any) 


and serve on a homemade roll (see separate post) or a lettuce leaf or over salad.  



Serve with homemade sweet potato fries (or cubes!) and steamed or raw veggies on the side.



My six year old ate an entire one and asked for seconds and ate that too.  The four year old didn't eat as enthusiastically but did eat most of hers.  My husband and I loved these!
