Crockpot Shredded Chicken - super easy!
Another super simple meal prepper for me is shredded chicken. It is so versatile - we make it into tacos or quesadillas, rice/bean/quinoa bowls, salads, buffalo chicken dip, enchiladas, barbecue chicken sandwiches, nachos, add into soups, or eat straight up with a veggie and my roasted sweet potatoes. Best of all it is super simple to make!
You can easily double this recipe and enjoy the dividends all week.
Ingredients:
- 2-3 chicken breasts (we use Costco's organic chicken breasts)
- 1 can of diced tomatoes with oregano, garlic and basil (or use fresh tomatoes and add spices and garlic)
- 1 Tbsp homemade taco seasoning (yes I know again - see Real Fit Real Food Mom's blog for recipe)
- 1 can of diced chiles, optional
Sometimes I also add a can of beans to make it stretch further.
What to do:
Put chicken in crockpot and pour tomatoes and chiles over chicken. Sprinkle the taco seasoning on top and cook on low for five hours. Shred the chicken right in the crock pot with two forks- it will tear apart easily.
This is a pic of it shredded next to our homemade whole grain rolls.
Serve with or on corn or flour tortillas with cheese, lettuce, extra tomatoes, avocado, and sour cream or yogurt. Or try it with the toppings on a boston bibb or iceberg lettuce leaf instead of a tortilla. Or try one of the many other options I mention above. Enjoy!
